Chilli Paneer Jalfrezi Recipe
Serves 1 / Preparation Time 5 mins / Cooking Time 7 mins Paneer Recipeingredients300 grams of Paneer
1 x tomato quarterd 1 x green pepper quartered 1 x red pepper quartered 4 x small chilli's halved (spliced) 4 x thick slices of aubergine (eggplant) 1/2 x Chef's Spoons of Vegetable Oil 1/2 x tbsp of Butter or Ghee 1 x small onion (chopped) 1/2 x tsp cumin seeds 1 x tsp garlic & ginger paste 1/2 x chefs spoon of tomato paste 1/2 x tsp methi leaves 1/2 tsp tandoori masala 1 x tbsp mixed powder 1/2 x tsp salt 1/2 x tsp chilli powder 2 x ladle base gravy 1 x large hand full of coriander 1 x pinch of garamasala preparationdeep fry your strips of aubergine for 1 minute (make sure oil is hot 180c).

- How to make the Curry (1 portion)
- Heat Vegetable Oil in the pan, then add the butter and melt. Once melted.
- Add the Onion (cook1 min)
- Add cumin
- Add Garlic/Ginger paste. (cook 1 min)
- Now add tomato paste. (cook 1 min)
- Add the spices - methi leaves, tandorri masala, mixed powder, salt & chilli powder (cook 1 min)
- Add first ladle of base gravy
- Add peppers (cook 1 min).
- Now add the aubergine. (cook 1 min)
- Add the chilli's
- add tomato's
- Add paneer
- Add large hand full of coriander
- Add second ladle of base gravy
- Add pinch of garamasala
- Bring to a simmer on low heat till the oil rises to the top. Now it's ready to serve. (2-3 mins)
- Garnish with some more fresh Coriander- Enjoy!
